Dry roast moong dal in slow flame for 8-10 minutes. Now add flaxseed and roast for 5 more minutes. Keep aside to cool. Grind it in mixer adding jiggery to it. Add clarified butter and make laddoos. This is high protein laddoo. It can be an excellent post workout meal.
Peel the skin of apple and cut into small pieces. Churn it the mixer by adding very little water to make a fine paste. Heat a thick pan. Add this apple paste and jaggery and keep stirring in low flame till the mixture turns thick and dark in colour.
Seive wheat flour, baking soda , baking powder & salt thoroughly. Add salt & jaggery to it. Squeeze lemon juice in milk and let it rest for 10 minutes. Once the milk curdles, add it to the wheat flour and mix softly by using hands. Now add curd, oil/ghee and eno and knead the dough with very soft hands. Apply oil on the tray and transfer this batter. Bake it for 20-25 minutes. You can also bake it in air fryer.
Add water to jaggery and leave it aside for 10 minutes in a clay pot. Now heat this mixture for 15-20 minutes till jaggery melts and gets little concentrated. Let it cool. This syrup’s shelf life is 15-20 days in room temperature.
FOR SUMMER COOL DRINK
Take 100 gms of thick curd and add 5-6 tsp of this jaggery syrup. It is very cool for the stomach and aids in digestion. During summer we drink plenty of water and other liquids and skip food. This summer cool thick drink provides the body with all the necessary nutrients.

Take one cup hot/warm milk. Add 5-6 tsp on jaggery syrup. Instead of drinking tea in the morning have this energy loaded milk.
