  1. For Gravy Make a fine paste of tomato, ginger, tej patta, turmeric powder, Kashmiri red chilli powder, green chilli. Method : Add ghee in a pan and add mustartd seeds. Let it splutter. Now add cumin seeds and coriander powder. Saute for few seconds. Now pour the grinded mixture. Stir till the masala leaves the sides of the pan. Now add water to and let it boil. Take another pan and dry roast makhanas. Once makhanas are nicely roasted, transfer it to the gravy pan. Cover with lid and boil for 10-12 minutes till the right consistency is attained. Sprinkle finely chopped coriander leaves. Serve hot with phulkas or rice.

  1. Finely cut onion, tomato & green chilli. Mix all the masalas, salt & coriander leaves and keep it aside. Cut papad into 2 pieces. Heat a tawa and roast half piece papad. Roll it immediately into a cone when the papad is hot. You can use a tissue paper to hold it as it will be little hot. Now fill the cone with the ready masala and immediately serve it. You child would love to have this healthy snack.

  1. Wash dal & rice thoroughly. Add water, turmeric powder, bay leaves & heat it in thick pan. Do not cover the pan with lid. Once rice & dal is semi cooked start preparing for seasoning. For Seasoning : Heat oil in a pan. Add cumin seeds. Wait until it splutters. Now add green chilli, finely cut tomatoes, little turmeric powder. Saute for 2 mimutes. Now add this seasoning to half cooked khichdi. Add little more water if required. Now add cumin powder & a dollop of ghee, also sugar. Let it boil for sometime. Serve it hot with papad, achar & curd. This is absolutely soothing for the digestive tract especially during monsoon & yummy too for all age groups.

  1. Cut the flower and chop the buds and keep it in a container containing buttermilk
  2. ince browning reaction takes place, the chopped buds needs to be dipped in buttermilk. Now take a pan. Add oil and heat it.
  3. Now add mustard seeds and allow it to splutter. Add the rest of the ingredients that is tur dal, red chillies, green chilli, rice. Saute it.
  4. Now add little water& salt to this and churn it in mixer. The paste should be thick in consistency. Now steam this in idli maker for 15 minutes. Once it is cooled down break it by using fingers.
  5. Take a pan. Heat it by adding 1 tsp oil. Put curry leaves, chopped buds, salt and sauté it.
  6. Now add this steamed and mashed masala to it and sauté it for few minutes. Cover it with a lid for 5-7 minutes to get the favour and aroma.
