  1. For Gravy Grind tomatoes, bay leaves, cumin seeds, grated coconut, curry leaves, turmeric powder, red chilli powder into a fine paste. Add ghee and heat a pan adding mustard seeds. Once the seeds splutter, immediately add coriander powder. Mix well for 2 minutes. Then add the gravy. Keep stirring till the gravy leaves the sides of the pan. Now add the cut apples, mix well by adding water and salt. Keep it covered on low flame for 10-12 minutes. Garnish with coriander leaves. Serve hot with chapatti/paratha/rice.

  1. 1. Take a glass. Add mashed ripe mangoes and coconut sugar. Coconut sugar gives a caramel twist to the mango latte. 2. Now add water. Mix it well. 3. Add ice cubes to it. Then pour milk. 4. Again mix it lightly.

  1. 1. Add all the ingredients in the blender except desikhaand.
    2. Churn it once.
    3. Now add desikhaand, ice cubes and water and blend it again.
    4. Serve chilled.

  1. 1. Cook whole ripe mango either in steamer or pressure cooker for 10-12 minutes. 2. Add half cup water to freshly grated coconut and churn it in mixer into a fine paste. 3. After cooling the cooked mango, take out its pulp. 4. Add mango pulp, curd, ground coconut gravy, curry leaves, cumin seeds, red chilli powder and salt. 5. Mix it well. 6. Refrigerated it for half an hour and serve.

  5. Pour it in matkas and spread little pista over it.

BASIC JAGGERY SYRUP
  1. Add water to jaggery and leave it aside for 10 minutes in a clay pot. Now heat this mixture for 15-20 minutes till jaggery melts and gets little concentrated. Let it cool. This syrup’s shelf life is 15-20 days in room temperature.
FOR SUMMER COOL DRINK
  1. Take 100 gms of thick curd and add 5-6 tsp of this jaggery syrup. It is very cool for the stomach and aids in digestion. During summer we drink plenty of water and other liquids and skip food. This summer cool thick drink provides the body with all the necessary nutrients.

  1. Cut the flower and chop the buds and keep it in a container containing buttermilk

  2. ince browning reaction takes place, the chopped buds needs to be dipped in buttermilk. Now take a pan. Add oil and heat it.

  3. Now add mustard seeds and allow it to splutter. Add the rest of the ingredients that is tur dal, red chillies, green chilli, rice. Saute it.

  4. Now add little water& salt to this and churn it in mixer. The paste should be thick in consistency. Now steam this in idli maker for 15 minutes. Once it is cooled down break it by using fingers.

  5. Take a pan. Heat it by adding 1 tsp oil. Put curry leaves, chopped buds, salt and sauté it.

  6. Now add this steamed and mashed masala to it and sauté it for few minutes. Cover it with a lid for 5-7 minutes to get the favour and aroma.
